Danske småkager and ANZAC crisps

At the very end of our little break I neglected taxes and other computer work for a cookie-based two-fer. First up, Danish dandies (danske småkager). Sharon Tyler Herbst imagines these cookies take their name from their dandy lemon flavor. I’m not sure I would use the word dandy to describe it, but for such a dainty little tidbit, they do have a big rich flavor. Zest of a lemon, three sieved hard-boiled eggs, lots of butter, and a glaze of light corn syrup make these melt-in-your-mouth delicious. They are particularly excellent with tea.

It’s a little early for these ANZAC crisps as ANZAC Day is not until 24 April, but hey, this blog isn’t based in Australia or New Zealand so I’ve gone ahead and risked the faux pas. The crisps are quick to make and I had everything on hand except the Lyle’s golden syrup, a fault easily remedied with a quick run to Wegmans. Crumbly and, yes! crisp, these little nuggets are nutty with coconut and oatmeal and absolutely delicious. And now I have Lyle’s on hand for the next time it’s required. And it will be required. That stuff is good!
