In Norwegian, Pepperkaker; in Danish, Pebernødder; in Swedish, Pepparnötter; in German, Pfeffernüsse; and here at home, peppernuts. Ms. Herbst says the chopped toasted almonds are optional. But they’re peppernuts, nødder, nötter and nüsse, and in Norwegian nøtter, so really. Why not add them in?

The recipe makes about sixteen dozen, but they will keep for a long time without freezing. If, that is, you can keep your hands off them. The little bite-sized cookies are flavored with white pepper (really), cardamom, ginger and cinnamon and, mixed with the toasted almonds, they dance lightly on your taste buds. No one can eat just one.
